Sponge Cake


This is my very first post on this blog.So starting with something sweet.I recently made this cake for my son's 3rd birthday.This was my first attempt to bake a cake and to my surprise it turned out very nice and yummy.After so much googling around and asking my friends with their experiences I finally settled on this recipe.

Ingredients
All Purpose flour - 1 cup

Powdered sugar - 3/4 cup
Egg - 2
Refined oil /unsalted butter - 1/4 cup
Baking pw - 2 tsp
Milk - 1/2 cup
Vanilla essence - 1 tsp
Salt- 1/4 tsp

Method
1. Take eggs in a bowl and beat them very well till it becomes lighter and almost double.
2. Now mix sugar and oil/butter together in a bowl and beat them very well till the mixture becomes light and fluffy.
3. Add the beaten eggs to this sugar,oil mixture.Again mix it thoroughly.
4. Now prepare a mixture of all purpose flour (maida), salt and baking powder and sieve it to so that there will be no lumps.
5. At this point gradually add this flour/maida mixture, to the batter prepared by mixing sugar, oil and egg. As you stir the mixture, it will become dense. Add some milk in small amount to make it smooth. Keep on repeating the process of adding flour/maida and then milk as required, till batter is well blended (It should look fluffy/ soft).
6. Add Vanilla essence to the batter and again blend thoroughly.
7. To prepare the baking/cake tin grease it with oil/butter and then sprinkle some flour/maida over greased surface evenly.
8. Preheat oven on 400 degree for 15 min. Now put the cake inside the oven and reduce temperature to 350 degree.Bake for 20-30 minutes or till the cake is done.To check whether the cake is done or not put a skewer inside the cake. If the mixture does not stick on it,means that cake is done.

Note:You can make the cake without egg.For that you just need to add 1/2 more cup of refined oil/butter.

Decoration
You can decorate the cake with frosting and any other stuff available in market. I used Pillsbury Whipped Supreme white frosting.Apply frosting on top of your completely cooled cake and spread coloured funfetti on it.Finally put some cherries on it.
